Nice spinning Wish i could taste from it
I just smoked 3 lbs copper river sockeye and 2 lbs of Coho,man it came out good, vacuum packed it all up good to go, I use a 75% brown sugar 25% pink Himalayan sea salt brine.. then I swath a honey/pure maple syrup mix over it each time I add chips... all I have is the big chief, it holds a lot but the heat isn't regulated, not yet, might tear the element out and install one that is... 30 minute chip burns.. last summer I tried to smoke 2 lbs sockeye and it "overcooked" only had it in 2 hours.. the difference between 2 hours in 105 degree heat and 6 hours in 40 degree is huge.. so I guess it needs vents as well? .. .
